I was working in the butcher shop last Saturday morning and new customers came in and asked about Chateaubriand.  It took me a second to recognize the name.  It was to be their Mother's Day meal and they wanted to use our highly acclaimed beef tenderloin.....the same cut that our sought after beef filets are cut, for their special occasion. After a quick review, I knew what was on my Mother's Day menu too!  It's so simple to cook. I thought y'all would enjoy an easy cook with high end results for your celebration. So here goes! The pork tenderloin is an easy, tender & delicious go to for us.  Incredibly versatile. It carries many seasonings well. Our Ranch, Taco, BBQ or Signature Seasoning are all delicious results.  Today, I am sharing my #1 way to prepare one. Pan seared & oven baked.  Ingredients: - Cast iron skillet or oven safe pan - 1 pork tenderloin - Olive Oil - JR Table Blend Seasoning - Meat Thermometer Recipe: - Preheat skillet on stove top to sear tenderloin (optional)  - Preheat oven to 400 - Add Olive Oil to skillet to prevent sticking.  - While pan is heating...

Ya'll.....I have been envious of that smoker / grilled meat look for awhile.  But, with very little time after the farm work is done, there's just been no time for us to smoke something for hours.  I found my way around that tonight.  And it's SO. Stinking. We all need a hardy go to meal.  Especially when the kids start back to school and the weather cools off.  One of my family favs is pot roast.  Our chucks are ideal for this with nice marbling and great flavor.  And, it's a 1 pot dish that I can simplify with our delicious bouillions!
