To cook, place the bones, marrow side up in a roasting pan. Drizzle with oil and season well. Roast the bones at 475 degrees for 20-25 minutes or until the bones are browned and the marrow is bubbling.

To make stock, roast & add water and cook as long as you can....24-48 hours if you can do so safely.
