We will breakdown a whole Meishan Carcass Sunday - you're working along side fellow class members to make it happen under my tuteledge. Along the way, you’ll have the opportunity to help me & practice some cutwork on your own.
When we're done, the cuts/ sausages will be divided amongst class members - included in the price.
This class will be with ALL Meishan Pork!
[But the same cuts apply to any breed of pig!]
(Head coverings and all USDA safety & cleanliness protocols are necessary & will be taught as well.)
