Laura will break down part of a Meishan carcass* for you Saturday morning. Then, you’ll have the opportunity to practice cutwork on your own.
*(Some heritage pigs may be involved here because there are so few Meishans to work with currently.)
Sunday morning, we'll work through cures on Capicola, bacon, and prosciutto. Meishan cuts from this carcass & another will be available for purchase too.

Price includes lunch and dinner* on Saturday. Chef Wes, of Silver Queen, will prepare his favorite Meishan pork dinner.
